Our Story
I am a bread lover. I trained at Le Cordon Bleu Paris and earned my Diplôme de Boulangerie because I believed I deserved better bread — bread with history, with flavor, with integrity. And so do you. I want to share these forgotten flavors with you, based on the real ingredients: organic flour, natural levain, time — and love. That last one doesn't appear on any label. It shows up in the bread.
In France, bread was so essential that after the Revolution, the government regulated its price and quality by law. For centuries it was the foundation of daily life — made with simple ingredients, slow fermentation, and craft passed down through generations.
But after World War II, industrial baking changed everything. To feed a growing population faster and cheaper, mills began selecting and modifying wheat varieties to increase yield and facilitate gluten network formation. Flour conditioners were introduced to make dough easier to machine-knead. Commercial yeast replaced natural fermentation for faster proofing and baking. And when the bread lacked taste, the industry compensated with more salt. The result: bread that looked the same but lacked taste — and became increasingly hard to digest.
Le 4nil was born from a simple frustration: waiting in long lines at artisan bakeries, only to find your favorite item sold out, or discovering that the “sourdough” on offer was sour for all the wrong reasons.
At Le 4nil, every loaf is made to order. We use natural levain and ferment our doughs for a minimum of 24 hours. This is not just about flavor. Slow fermentation — at least 24 hours — does something bread baked the same day simply cannot replicate. Time allows gluten to break down naturally, improving digestibility and developing deep, complex flavor. The bread also preserves itself without additives — no improvers, no preservatives.
We use organic flour exclusively, grown without herbicides. For us, organic isn’t a marketing choice — it’s the foundation of bread that is genuinely better for you.
We bake breads from the regions of France — the Pain de Lodève from Hérault, the Couronne Bordelaise from Aquitaine, the Pain d’Épeautre from ancient grain traditions — breads that carry centuries of craft and terroir, now made in Northern California with local, seasonal ingredients.
Our name is a play on “fournil” (pronounced four-NEEL) — the French word for the baker’s workshop, the heart of every boulangerie. That is what Le 4nil is: a fournil for your community, accessible to all online.
