Buckwheat Loaf (Pavé Sarrasin)

A rustic square loaf blending organic wheat flour with buckwheat, a grain cultivated in France since the Middle Ages. The buckwheat adds a nutty, earthy depth and naturally reduces the gluten load. Made with natural levain, slow-fermented. Pairs beautifully with strong cheeses and charcuterie.
