Traditional Fougasse (Fougasse Traditionnelle)

The original baker's bread — historically used in southern France to test the temperature of a wood-fired oven before the day's bake. Our fougasse traditionnelle is made with organic wheat flour, natural levain, extra-virgin olive oil, and olive pieces folded into the dough. Hand-shaped with its signature leaf cuts, brushed with olive oil straight out of the oven.

Light, crispy crust. Chewy, open crumb. Best eaten the day of baking, torn and shared.
